I've been doing a lot of cooking and experimentation since around Thanksgiving, but with the holidays I haven't had as much chance to update this journal. Today, hopefully, that gets corrected.

I've been making a good number of different recipes gotten from Penzey's spices, and one that I tried out for the first time over the holidays was

Holiday Cookie Balls

Ingredients:

  • 1 cup flour
  • 1/4 tsp ground mace
  • 1/2 tsp cinnamon (I used Penzey's Korintje cinnamon, which to me is one of the finer blends out there -- it has a rich, memorable flavor that I've rarely found with other store-bought cinnamon)
  • 3 tbsp powdered (confectioner's) sugar
  • 1/4 cup finely chopped nuts (walnuts, pecans, or almonds)
  • 1 tsp pure vanilla extract
  • 1 stick (1/2 cup) butter, melted
  • 1 cup extra powdered/confectioner's sugar, for rolling


Method:

1. Preheat oven to 350 degrees F.

2. Mix together the flour, spices, powdered sugar and nuts. Mix the vanilla into the cooled melted butter. Add the butter mixture to the dry ingredients and mix well.

3. Roll the dough into balls a little larger than marbles and place on greased (or baking-parchment-covered) baking sheets.

4. Bake at 350 degrees for 10 - 12 minutes. Roll in powdered sugar while still warm.

Yields around 20 sugared cookie balls. (You'll probably end up with a little confectioner's sugar left over.)


Reasonably easy to make, these confections are a little bit sweet and a little bit savory. I thought that the dough was maybe a little too crumbly, rather than chewy, but perhaps that's something I can work on if I tinker with it more in the future.
