Last week, I made some of my cinnamon carrot raisin muffins for co-workers, and they were such a hit that I've gotten requests for other types of muffins since. One request in particular was for chocolate chip muffins, so I went to a number of sources, looked at muffin recipes I'd baked before, and tinkered about to end up with this:


One Dozen Chocolate Chip Muffins



Ingredients:

Mixing:

* 2 cups all-purpose flour
* 1/3 cup white sugar
* 1/3 cup brown sugar
* 3 teaspoons baking powder
* 1/2 teaspoon salt
* 1 teaspoon cinnamon
* 1/2 teaspoon nutmeg
* 3/4 cup (about 6 oz, half of a 12-oz package) miniature semisweet chocolate chips
* 1 egg, beaten
* 3/4 cup milk
* 1/3 cup vegetable oil (alternatively, try subbing in a similar quantity of applesauce; I lacked applesauce this time but will try it next time to compare and contrast)

Topping:

* vanilla (1 splash for each muffin)
* 3 teaspoons white sugar
* 2 teaspoons brown sugar


Method:

1. Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners. (I've had great success recently with paper muffin cups inside foil muffin cups -- they may or may not sell them at your local market.)

2. In a large bowl, combine flour, 1/3 cup sugar, 1/3 cup brown sugar, baking powder, salt, cinnamon, and nutmeg and whisk or sift to remove clumps. Combine egg, milk, and oil (or applesauce) in a separate bowl and stir well to combine. Add egg-milk mixture to flour mixture along with miniature chocolate chips and stir just until batter is moistened and combined. Spoon batter into prepared muffin cups, filling about 3/4 full. Place one splash of vanilla on top of batter in each cup.

3. In a small bowl, stir together 3 teaspoons white sugar and 2 teaspoons brown sugar. Sprinkle sugar mixture over muffins.

4. Bake in preheated oven for 20 to 25 minutes, until golden brown. Remove immediately from pan.


All in all, these turned out much better than I was expecting for a first attempt. Light and somewhat airy, with just enough sweetness and an excellent aroma of cinnamon.
