Last week I was up in the White Mountains hiking Cannon Mountain, and when I came down to the skytram and museum at the base of the still-unsnowy ski slopes I stopped by their gift shop. Most of what they had was just touristy stuff, but there was a cookbook that caught my eye -- Yolanda's All Apple Cookbook, by Yolanda Lodi.

I love apples. Tasty, sweet, incredibly flexible foodstuffs that go in practically everything. I don't have a lot of recipes that rely on them, though. So how could I resist picking up a cookbook like this one? This is the first recipe I'm trying, slightly modified.

Apple-Spiced Bulgar

Ingredients:

* 2 tablespoons extra-virgin olive oil
* 1 cup onion, chopped (about 1 medium onion)
* 2 cloves garlic, minced
* 1 teaspoon ground ginger
* 1 cup coarse bulgar wheat
* 1 can (14 oz. vegetable broth)
* 1/2 teaspoon ground cinnamon
* 1 medium sweet apple, peeled, cored, and finely diced
* 1/2 cup golden raisins

Method:

1. In a large saucepan heat olive oil. Add onions, garlic, and ginger. Saute until onions are soft, but not browned (about 5 minutes).

2. Add bulgar wheat. Continue stirring until toasted (about 3 minutes).

3. Stir in vegetable broth and cinnamon. Bring to a full boil.

4. Reduce heat to low. Cover and simmer for about 13 minutes or until bulgar is tender and liquid is absorbed.

5. Stir in finely diced apples and raisins.

6. Cover and cook for an additioinal two minutes.

Makes 6 to 8 servings.

First reaction? Not bad at all as a side dish. It's a little on the bland side, so perhaps it could use a little additional spicing, but it's moderately tasty overall.
