[Recipe] Spicy Red Pizza Sauce
A while back, hankering for pizza, I'd looked up some various recipes for pizza sauces online and blended a bunch together to make this one -- my nigh-ideal sauce, with tons of flavor, a little heat and some zing.
Spicy Red Pizza Sauce
Ingredients
* 1 tablespoon olive oil
* 1 tablespoon butter or margarine
* one medium onion, diced
* three cloves of garlic, smashed flat (to help release the flavor) and then diced
* one 14-ounce can of tomato sauce
* one 12-ounce can of tomato paste
* 1/2 - 3/4 cup water
* 1/2 teaspoon sugar
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1/4 teaspoon paprika
* 1/4 teaspoon cayenne pepper
* 1/4 teaspoon Chinese ground red pepper (optional, could probably substitute red pepper flakes)
* 1/2 teaspoon thyme
* 1/2 teaspoon marjoram
* 1/2 teaspoon oregano
* 1/2 teaspoon basil
* 1/4 teaspoon fennel
Method
1. In a medium saucepan over medium-high heat, saute onion and garlic in olive oil and butter until agreeably limp and fragrant. While doing so, mix sugar, salt, black peppter, paprika, cayenne, Chinese red pepper, thme, marjoram, oregano, basil, and fennel in a small bowl and mix thoroughly.
2. Reduce heat to medium. Add tomato sauce, tomato paste, and water to saucepan, and stir until well combined. You may add more water if you choose; adding more will make the sauce somewhat thinner and less viscous (not always the ideal).
3. Add bowl of spices to sauce to mix and reduce heat to low. Simmer for 20 - 30 minutes, stirring occasionally.
Makes about three cups of tasty, memorable pizza sauce. Refrigerate any extra in airtight containers.
This works great on pizza, in calzones (and I'll be posting recipes for those once I perfect a few), or as a dipping sauce for Three Cheese Garlic Bread with Herbs.
