Not at all put out by my failure to successfully make peanut brittle, but still filled with a hankering for something sweet and peanut-y, I decided to pull out an old recipe of my mom's. These rich, hearty snacks were always quick to disappear whenever they were made when I and my sister were growing up. I never could, and still can't, resist a serving of
Mom's Peanut Butter Rice Krispy Treats

Ingredients
* 1 stick (1/2 cup or 8 tablespoons) of butter/margarine
* 1 cup corn syrup
* 1 cup peanut butter
* 1 cup sugar
* 1 12-oz. box of Rice Krispys
Method
1. Melt and combine butter/margarine, corn syrup, peanut butter, and sugar in a large saucepan. Cook to a rolling boil, then hold at that temp for 1 minute, stirring often.
2. Combine with Rice Krispy cereal in a large (really, LARGE) mixing bowl/pot. (To give you an idea of how big I mean, I typically use my 12-quart soup pot to mix it. I don't own anything else large enough that won't overflow with the contents of just a single 12-oz. box of Rice Krispys.) Stir until well combined, then spoon into well-greased baking pans. Flatten with spoon, cut, and allow to cool.
Easy to make, quick to prepare, and ridiculously tasty. This has been one of my favorite snacks since childhood.
