The other night, I decided I wanted to try out a pesto sauce recipe I'd found, and thought that cheesy garlic bread would be just the thing to go with it. I made the garlic bread first, and as it turned out it smelled and tasted so good that I didn't bother with the pesto sauce and pasta after all!
Three-Cheese Garlic Bread with Herbs
Ingredients
* 1/2 cup (1 stick) butter or margarine
* 2 cloves garlic, smashed and diced
* 3 tablespoons fresh herbs (basil, rosemary, oregano, thyme, parsley, or any combination) (freshly chopped herbs are likely better, but I have made this recipe with dried/powdered herbs and it was still sinfully tasty)
* 1 loaf French bread or ciabatta bread, halved lengthwise (my first attempt of this recipe was made with a fresh loaf of garlic ciabatta from the bakery -- soooooo good)
* 1 cup grated Cheddar cheese
* 1 cup grated mozzarella cheese
* 1 cup grated Monterey Jack cheese (or mix including Monterey Jack, such as Sargento's 4-Cheese Mexican that includes Monterey Jack, cheddar, queso quesadilla, & asadero cheese)
Method
1. Preheat oven to 350 degrees F.
2. In a small microwaveable bowl, melt butter until it is well-softened by not wholly melted. Add herbs and diced garlic to the softened butter and stir until ingredients are thoroughly mixed.
3. Spread herb-butter mixture on cut sides of bread. Sprinkle cheese mixture on top of herb-butter spread. Place bread, buttered-side up, on a baking sheet and bake until bread is warmed and cheese is melted, 10 to 13 minutes. Cut into 1.5" slices.
Goes very well with the previously posted Meaty Red Sauce for dipping or topping.
