Back in the latter part of last year, I found myself craving macaroni and cheese -- or at least, something kind of like macaroni and cheese. I tinkered around some with various recipes I'd found out on the web, took what I wanted from them, and ended up producing
Four-Cheese Cheddarwurst Noodles
Preparation Time: 30 minutes
Cook Time: 45 minutes
Ingredients
* 2 cups noodles (any will do, but I used Barilla medium shells)
* 1 medium onion, diced
* 1 tablespoon vegetable or olive oil
* 6 cheddarwurst sausage links, sliced into discs
* 1 cup cottage cheese
* 1/2 cup sour cream
* 1 cup shredded mozzarella cheese
* 1 cup shredded cheddar cheese
* 4 oz. of block pepperjack cheese, julienned
* 1 egg
* 1 teaspoon Worcestershire sauce
* 1/4 cup milk
* 1/2 teaspoon salt
* 1/2 teaspoon ground black pepper
* 3 tablespoons butter
Method
1. Preheat oven to 300 degrees Fahrenheit.
2. Boil the noodles as recommended on their packaging. Drain and set aside.
3. While noodles are cooking, saute diced onion in a frying pan or skillet over medium heat until limp and golden.
4. Mix cheddarwurst, cottage cheese, sour cream, mozzarella cheese, cheddar cheese, pepperjack cheese, egg, Worcestershire sauce, milk, salt, pepper, cooked noodles, onions, and butter in a large (2.5-qt.) casserole dish. Stir thoroughly to mix and coat ingredients. Cook in oven at 300 degrees for 45 minutes.
Serves six decent-sized servings.

Now, last night I didn't quite have all the ingredients I needed, but I did have most of them. (My fridge gather strange and arcane ingredients, and often seems to lack in the basics. *grin* ) I ended up adding half a pound of diced-up breakfast sausage to the onion to saute, substituted 6 ounces of cream cheese for the cottage cheese, used jalapeno cheddar cheese instead of pepperjack, and so forth. Overall, though it ended up quite tasty all the same. Not quite the same flavor, but definitely worth trying out for variation.
