I'm aiming for a lower-carb diet as part of the exercise regimen I'm on. A diabetic co-worker of mine recommended a particular brand of pasta (Dreamfields) as much lower carb than the usual stuff, but still better tasting than the generally bland whole-wheat pasta which is more widely out there.

I checked out the brand the next time I was in the market, and there was quite an interesting recipe on the box. I adapted it and changed a few things (not a big fan of the recipe-recommended shrimp), and the result turned out to be extremely tasty.


Angel Hair Pasta with Chicken, Tomatoes, and Basil

Ingredients

* 1 package Dreamfields angel hair pasta
* 1 tbsp olive oil
* 1 - 1.5 lbs. boneless skinless chicken breast, diced
* 1/2 cup chopped onion
* 3 cloves garlic, minced
* 3/4 tsp fennel seeds, crushed
* 1/4 tsp crushed red pepper (I used cayenne pepper), or to taste
* 2 - 3 slices cooked bacon, chopped
* 1/4 cup white cooking wine or chicken broth
* 2 cans (14.5 oz) stewed tomatoes, undrained (I suspect one could use cans of diced tomatoes as well)
* 1/3 cup chopped fresh basil (lacking fresh basil, I threw on about five dashes of dry basil instead)
* 1/3 cup grated Parmesan cheese (optional)

Method

1. Heat one tablespoon olive oil in a large skillet over medium-high heat. Add chicken and saute for 3 minutes until almost done. Remove from pan and set aside.

2. In the same pan, add onion, garlic, fennel, red pepper, and bacon; saute 1 minute. Add cooking wine or broth, and cook until liquid has evaporated. Add tomatoes and basil, bring to a boil. Return diced chicken to pan, reduce heat, and simmer for 10 minutes or until liquid has reduced, stirring occasionally.

3. While tomato sauce is cooking, cook angel hair according to package directions. (4 quarts of water, boiled, cooking the angel hair pasta for 5 minutes. Drain, then add 1 tbsp olive oil to pot and set aside.)

4. Serve sauce mixture over pasta. Sprinkle with Parmesan cheese, if desired. Makes 6 servings.

Sweet, spicy, and delicious sauce over angel hair pasta -- fantastic! A little tricky to make, at some part (multiple pans going at one time), but all in all a very tasty dish. I'd definitely make it again.
